Pizza

Ingredients

Dough:

  • 1+1/2 cups of warm water

  • 2+1/4 teaspoons of yeast

  • 3+3/4 (490g) cups of all purpose flour

  • 2 tablespoons of olive oil

  • 2 teaspoons of salt

  • 1 teaspoon of sugar

Sauce:

  • 5 pilled and diced tomatoes

  • 1 large garlic clove (or 2 small ones)

  • 1 small onion

  • olive oil

Cheese:

  • 200g of mozzarella cheese

 

Preparation


Yeast

  1. Into a large mixing bowl put the warm water and add the dry yeast.

  2. Let rest for 10 minutes in a warm place, if the yeast didn't dissolve, give it a slight mix and wait until bubbles appear.



 

Mix

  1. Into the mixer bowl (the one with the yeast and water) gradually add the flour, salt, sugar and olive oil.

  2. Mix in a slow speed using a guitar hook for about 3-5 min.

  3. Change to dough hook and mix in a medium speed for 7-10 min.

  4. the dough should be a little sticky and oily, if its too greasy add flour until it reaches the right consistency.

  5. Oil the bowl and cover with a plastic wrap.


 

Rise and Rest (choose one of the rising options)

  • 24 hour rise (best taste) - Put the bowl to the fridge and wait for well... 24 hours.

  • 8 hour rise (quicker but still good) - Place the bowl in a warm temperature area, the longer it sits (8 hours are recommended) the richer the flavors.

  • 1.5 hour rise (fast and furious) - Same concept warm place for 1.5 hours at least.

  1. After we've waited for the dough to rise, we will take it out of the bowl, flour slightly and divide the dough to two, roll into 2 balls and let rise once again for 15-20 min under a plastic wrap and a towel (so it won't get sticky).


 

Sauce

  1. In a large and hot pan, warm the olive oil and add the onion, fry until lightly golden

  2. Add the chopped garlic and fry for 2 additional minutes

  3. Add the chopped tomatoes and reduce the heat to medium level, everything should slowly cook for app. 20-30min until the sauce is reduced and most of the water are gone.

  4. Transfer through a thin strainer until all that remains in the strainer is the onion and garlic

  5. Add salt and pepper based on your taste buds


 

Cooking time!

  1. Heat the over to 200c for at least 10min

  2. Take a baking sheet and roll the dough to a perfect shape (1 dough ball = 1 pizza)

  3. Add half of the sauce and add your most desired toppings

  4. Cover with cheese and put into the over for 10min
